Healthy Banana Bread

We’ve been playing around with savoury recipes lately and are totally obsessed with anything bread so this new recipe is fitting the bill peeeeeerfectly. Not only is this savoury loaf perfect for any meal time, it’s also 100% healthy. Could life get any better?

You will need:

1 can cannelloni beans, drained
2 1/2 ripe bananas
1 Tbsp. coconut oil
2 tbsp cashew butter
5 tbsp apple sauce
½ tsp. vanilla
½ cup coconut sugar
1¾ cup oat flour
1 tsp. baking powder
1/2 cup chopped walnuts
1/2 cup chopped pecans
¼ tsp. salt
1tsp cinnamon
1/4 tsp nutmeg
1 egg or flax egg
1/4 cup almond milk

Method: Preheat the oven to 180C and lightly grease a loaf tin. Combine all of the dry ingredients in a large bowl and mix well. Set aside. In a food processor, blend the beans until smooth before adding the bananas followed by the coconut oil and cashew butter. Next add the apple sauce and coconut sugar and whizz to combine. 

Transfer the bean mixture into a large bowl before adding in the dry ingredients and egg alternatively. Stir really well, adding almond milk if necessary. 

Pour into the prepared loaf tin and sprinkle a handful of jumbo rolled oats on top. Bake for 35-40 minutes until a toothpick inserted in the middle comes out clean. 

Leave on a rack to cool fully before slicing.
