Vegan Chocolate Orange Cookies

Ok, so things are getting serious in terms of our cookie game. These ones are without a doubt our favourite combo on the circuit. Think crunchy, zesty, chocolatey and oaty all in one bite. You’d be mad to miss out on these. Oh, and the fact they taste like Terry’s chocolate orange is a definite bonus…

Vegan Chocolate Orange Cookies• • • •

You will need:

1/2 cup jumbo rolled oats
1/2 cup quinoa flakes
2 tbsp chocolate protein of choice (can omit)
2 tsp cacoa powder
1/2 tsp baking powder
1/4 tsp salt
1/4 cup coconut oil, melted
2 tbsp brown rice syrup
3/4 cup coconut sugar, packed
3 tbsp coconut yoghurt
3 tbsp cashew butter
1/2 tsp vanilla extract
1/4 cup dessicated coconut
Dash of almond milk
1/4 cup mixed choc chips
1 tsp orange extract
zest of 1 orange

Method:

Preheat oven to 180C. In a bowl combine all of the dry ingredients minus the chocolate chunks,  and set aside. In a separate bowl whisk together the yoghurt, cashew butter, coconut oil, rice syrup, orange extract and vanilla extract until thoroughly combined and smooth before pouring into the dry ingredients. Stir well until a dough is formed before slowly mixing in the dark chocolate and orange zest.

Using a large tbsp separate out the dough and roll into balls before placing them on a lined baking sheet leaving enough space between each cookie. Press down gently with your fingers to form disks before baking for 10-11 minutes until brown and slightly crispy around the edges.

Leave to cool on a wire rack and enjoy!
