Mint Chocolate Chickpea Cookies – Healthy and Vegan

We’ve been seriously upping our cookie game and decided to try out a few exotic flavours to share with you all. The results have been pretty epic. I mean, who doesn’t like mint chocolate?! Let us know if you give these a go!

Vegan Mint Chocolate Chip Cookies• • • •

You will need:

1 1/2 cup chickpeas
1/4 cup oat flour
1 tsp peppermint extract
2 tbsp cocoa powder
2 tbsp almond flour
3/4 cup coconut sugar
1 tsp vanilla extract
2 tbsp cup peanut butter
1/4 cup brown rice syrup
1 tsp baking powder
1/4 cup chocolate chips, chopped
1/2 cup jumbo rolled oats
1/4 cup coconut yoghurt

Method: Preheat oven to 180degrees c. Combine all of the ingredients minus the dark chocolate jumbo oats in a food processor and whizz until smooth. Transfer the mixture into a large bowl before folding in the jumbo oats and chocolate chunks. Using a tbsp, form medium sized balls from the dough and place them out evenly on a lined baking tray. Push down slightly with your fingers or the back of a spoon to form disks. Bake for 15 minutes or slightly darkened around the edges.
