Healthy Fruit and Nut Vegan Cookies

By now you must know that we’re total cookie addicts. Have you tried our chickpea cookies yet? Here’s one of our favourites when we’re not looking to go all out on the chocolate. A perfect mix of flavours that will 100% see you going back for more. Enjoy!

Healthy Fruit and Nut Vegan Cookies• • • •

1/2 cup jumbo rolled oats
2 tbsp oat flour
1/2 cup quinoa flakes
1/2 tsp baking powder
1/4 tsp salt
1/4 cup coconut oil, melted
2 tbsp maple syrup
1/2 cup coconut sugar, packed
Dash of cinnamon
1 flax egg
3 tbsp almond butter
1/2 tsp vanilla extract
1/4 cup dessicated coconut
1/4 cup dark chocolate chunks
1/4 cup chopped peanuts
1/4 cup chopped almonds
1/4 cup chopped cranberries
1/4 cup chopped walnuts

Method: Preheat oven to 180C. In a bowl combine all of the dry ingredients minus the chocolate chunks,  and chopped fruit and nuts and set aside. In a separate bowl whisk together the flax egg, almond butter, coconut oil, maple syrup and vanilla extract until thoroughly combined and smooth before pouring into the dry ingredients. Stir well until a dough is formed before slowly mixing in the dark chocolate and chopped fruit and nuts.

Using a large tbsp separate out the dough and roll into balls before placing them on a lined baking sheet leaving enough space between each cookie. Press down gently with your fingers to form disks before baking for 10-11 minutes until brown and slightly crispy around the edges.

Leave to cool on a wire rack and enjoy!
