Another one to add to our breakfast favourites. These bars are great for on the go. They’re full of healthy protein and antioxidants. One of our favourite snacks when in a rush!

You will need:
1/2 cup jumbo rolled oats
1/2 cup buckwheat flour
1/2 tsp baking powder Pinch of salt
1.5 cups oat flour
2 tbsp blueberry powder
1/2 cup coconut sugar
3/4 cup chopped nuts
120g coconut Yoghurt
2 tbsp apple sauce
2 medium bananas, extra ripe, mashed
1 tsp vanilla extract
1/2 cup almond milk

Method:
Method: Preheat oven to 170 degrees before lining a square tin with baking paper. In a large bowl, combine all of the dry ingredients minus the chopped nut, and mix well. In a separate bowl mash the bananas before adding the remaining wet ingredients. Mix well until fully combined before transferring into the bowl with the dry ingredients.
Stir well until a sticky dough is formed. Fold in the nuts before pouring the mixture into your lined tin. Distribute evenly and bake for 30-35 minutes until risen and cooked through. Leave to cool before slicing.
These are fab slathered with jam or nut butter (or both!)
