Healthy Berry Banana Bread

Following on from our standard breakfast favourite, today we’ve had a play around to create possibly our best breakfast bake yet. These are 100% healthy, 100% delicious and 100% fruity. You can’t go wrong.

Healthy Berry Bread

You will need:
1/2 cup jumbo rolled oats
1/2 cup sprouted wholewheat flour
1.5 cups oat flour
1 tsp baking powder
Pinch of salt
2 tbsp blueberry powder
1/3 cup coconut sugar
2 tbsp maple syrup
3 tbsp greek/coconut yoghurt
2 medium bananas, extra ripe, mashed
1 tsp vanilla extract
1 scoop vanilla protein powder (optional)
1/2 cup almond milk
1/2 cup frozen blueberries
1/2 cup frozen raspberries

Method:
Method: Preheat oven to 170 degrees before lining a square tin with baking paper. In a large bowl, combine all of the dry ingredients and mix well. In a separate bowl mash the bananas before adding the remaining wet ingredients. Mix well until fully combined before transferring into the bowl with the dry ingredients.

Stir well until a sticky dough is formed. If too dry, add a dash more almond milk. Fold in the frozen fruit before pouring the mixture into your lined tin. Distribute evenly and bake for 30-35 minutes until risen and cooked through. Leave to cool before slicing.

These are fab slathered with jam or nut butter (or both!)
