We’ve been fans of yours for so long now. When was the birth of Chocolate Covered Katie? 

I started the blog when I was in college. All of my friends were making Myspace pages or blogs at the time, just for fun.

Did you ever think that you’d gain fame from your blog?

Not at all! When I started, my blog had about 5 daily readers – all friends from my real life.

How does it feel to be so well known, and inspire people to make healthy swaps to their diets without compromising on taste? 
The best feeling in the world is receiving a comment from someone who says the blog somehow changed his or her life. I can be having the worst day, yet when one of those comments comes in, everything is suddenly wonderful.

Do you ever get sick of chocolate? 
 
Yes… sometimes when you are testing the sixth batch of brownies for the day, you just don’t ever want to look at chocolate again. However, an hour later, I will find myself back in the kitchen for more 😉

Everyone knows that you’re a blogger, but in your free time, what do you like to do? 

I love photography, love to read, take long walks, go running when I feel inspired, and just talk with friends. It can get lonely working by yourself, so I love being around people.

Our lives aren’t always as glamorous as they seem. In fact, a standard day for us is slouched behind the computer screen in our slacks with no make up. Where would we find you during a typical day? 

Pretty much everything you said… no makeup, slippers, and pajamas. Even if I go out in the morning, I’ll come home and get back in my pajamas. Pajamas > clothes.

Have you ever tried any crazy food combos? 

Crazy food combinations are my favorite. My mind is constantly making a list of all the flavors I can combine with whatever food I happen to be eating at the moment.

Tell us a secret about yourself

I honestly don’t think I have any! I’ve never been good at not sharing exactly what’s on my mind, and I don’t get embarrassed easily. Maybe the only remaining secret I had, I just shared on the blog.

Before your blog took off, what profession were you striving to get into? 

Was kind of just going through the motions of college, throwing around ideas like becoming a lawyer or a book editor.

We know that in the past you’ve received a negative response online. How do you deal with filtering out the negatives? 

When people started writing conspiracy theories about everything from my eating habits to my dating life, at first I worried anyone who came across one of those posts might think what was being written was true. But I got bored pretty quickly; it’s mostly just people saying I’m anorexic or picking apart my appearance. I think it’s kind of funny now… Someone left me a comment the other day saying I look like a pigmonster. Not sure what a pigmonster is, but it’s a nice change from all the comments saying I’m anorexic. My favorite comment ever is still the girl who called me a fat slug.

Do you have any pets? 

I have two rescue puppies, but they live with my parents. I miss them and hope to rescue more!

Do you ever regret being a blogger? 

Sometimes… I don’t get to dress up in work clothes, and I don’t have coworkers or work parties. But mostly, I think I have the most fantastically fabulous job in the world.

Where would you spend your dream weekend? And with whom? 

Hawaii, or any quiet and exotic beach location… With Ryan Reynolds’ unmarried identical twin. He exists, right???

If you could make one wish that would come true tomorrow, what would it be?
World peace would be nice. I know that makes me sound like a beauty contestant fromMiss Congeniality, but I keep up with all the major news outlets, and there’s just so much pain and suffering in the world right now.

 One thing that you wish could happen to bring more happiness to your life? 
I’m negotiating a book deal right now, and it has been so frustrating. All of the major publishers want me to do a second dessert book, but I am passionate about coming out with a cookbook on wholesomely healthy meals. I wish so much for the publishers to take a leap of faith.
